Vinification
Grapes were handpicked in the cool early morning, then destemmed, sorted, and gently crushed. After 4 hours of skin contact to enhance flavour, they were softly pressed and settled for 48 hours. Fermentation took place at 14–16°C over two weeks. The wine was then matured on its lees for two months with regular stirring to build complexity and a fuller mouthfeel.
