Vinification
Grapes are picked at optimal ripeness, destemmed and crushed. The juice is then floated for better clarification before fermentation. Fermentation takes place in stainless steel tanks at 15–16°C over 10 days. The wine is then racked and matured on fine lees with weekly stirring to enhance texture and mouthfeel, before bottling.
